We had some leftovers from the Chicken Fajitas I made recently, but not enough to count as a full meal the next day. Chris' solution was to serve the leftovers on top of nachos, and it was a delicious change of pace.
We usually have nachos with chili or plain chicken/steak, so adding a mix of seasoned chicken, peppers and onions on top of the chips added a ton of flavor. If you really want to kick things up, whip up a quick batch of Spicy Lime Salsa to spread on top. Enjoy!

Ingredients
- Leftover fajita filling
- Tortilla chips
- Jarred sliced jalapenos
- Salsa, homemade or store bought
- Light sour cream, for serving (optional)
- Guacamole, for serving (optional)
Preheat broiler to low.
Heat up the leftover fajita filling in the microwave. Cut into bite-size pieces.
In an oven-proof dish, spread chips evenly. Top with fajita filling, jalapenos and salsa. Sprinkle with cheese.
Place under broiler and heat just until cheese is melted and bubbly.
Serve immediately with sour cream and/or guacamole.
