Buckeye Bites

Happy second day of my cookie showdown! It's less than two weeks until Christmas and I'm sure you'll all be running around frantic the weekend before while trying to prepare for your Christmas celebrations. Am I right? If you're in a crunch for desserts and want something festive and new that won't take up too much time, these buckeye bites would be an excellent addition to your table.
I made these the other weekend and brought some to a football tailgate that we attended, and they were gone before I knew it. One girl even asked me if I sold them because they were the best thing she's ever tasted. So not only are they super quick and easy, but they're the amazing combination of peanut butter and chocolate, which you know everyone loves. Enjoy!

Ingredients

  • 1 (18 oz.) jar creamy peanut butter
  • 1/2 cup butter (softened) or 1/2 cup margarine (softened)
  • 1 lb. confectioners' sugar (about 3.5 cups)
  • 1 tbsp. vanilla
  • 18 oz. chocolate chips (milk or semi-sweet)
Cream peanut butter and butter. Add sugar and vanilla and mix well. 

Form into 1 inch balls and refrigerate for 30 minutes.

Melt chocolate chips in a double boiler or in a microwave-safe cup, stirring frequently. Using a toothpick, dip balls into chocolate so they are about 3/4 of the way covered.  Place chocolate side down on waxed paper. 

Let set at room temperature or refrigerate until set.
